This week, we're thrilled to feature Paloma The Bakery, one of Greenpoint's newest bakery programs housing some of the city's most innovative patisseries.

Paloma was born during the COVID-19 pandemic when owner Reuben Villagomez connected with Alexander Zecena, a veteran pastry chef from Chez Panisse and The French Laundry, creating a passionate collaboration focused on inclusive, memorable experiences.

What started as a tiny window operation has evolved to three-locations including a 2,000-square-foot space on Nassau Avenue where Executive Pastry Chef Zecena showcases his culinary artistry through rotating menus of handmade viennoiserie and seasonal pastries.

Paloma pairs their extensive menu of house-roasted, fair-trade coffees with extravagant pastry creations that often conceal surprising complexities beneath their beautiful surfaces.

  • PAIN AU RAISIN: A glazed pastry with a peel-able, crispy shell that covers a soft, naturally sweet middle—a perfect example of Paloma's attention to textural contrasts.


WARMING INSTRUCTIONS*:

  • Microwave: 20-30 seconds on high

  • Oven: 10 minutes at 325F on a baking sheet

*Only heat the Pain au Raisin
