This week, we're thrilled to feature Nick + Sons Bakery!
Founded in 2017 by photographer Nicholas Heavican after an apprenticeship at Braud & Co. in Iceland.
With zero baking experience, Nick was awestruck by a piece of sourdough and learned not just how to bake, but how bakeries bring communities together.
He teamed up with Nick Brophy, a Wall Street veteran and father of five seeking "what more there is" in life.

The za'atar croissant packs fragrance into every layer of flaky dough.

Started in a Pizza Kitchen at Night
Nick rented pizza kitchens by night while working by day, baking bread for neighborhood shops.
They started as a small weekend window walk-up, selling out by mid-morning.
The open kitchen design pays homage to the magic of that Iceland bakery where it all began.
