This week, we're thrilled to feature Win Son Bakery!


Created by chef Trigg Brown and Josh Ku — the duo behind Michelin Bib Gourmand restaurant Win Son.


The founders have a quintessentially New York story.


They met at a barbecue in BedStuy and bonded over food.


Then they went on to build the Michelin Bib Gourmand Win Son restaurant and bakery.


Trigg was named a Food & Wine Best New Chef.

Authentic Taiwanese Baking

This is authentic Taiwanese baking, without dumbing anything down or losing anything in translation.


The kind of pastries you'd find in Taiwan but made fresh daily in Brooklyn.


Everything is well-balanced and aims to be not-too-sweet.

Texture Matters, Not Just Flavors

The mochi donuts have that perfect chewy bounce that's impossible to stop eating.


The pine nut cookies are buttery, delicate, and genuinely moorish.


The egg custard tarts are filled with a mildly sweet custard that is somehow light and rich at the same time.


This is next-level pastry work that is too often overshadowed by the restaurant.
