Dominique Ansel Bakery comes from French pastry chef Dominique Ansel, who trained at legacy Parisian bakeries Pâtisserie Peltier and Fauchon before moving to the U.S. in 2006 and serving as head pastry chef at Daniel by Daniel Boulud.
Opening in 2011 and achieving worldwide fame with the trademarked Cronut in 2013, Ansel has continued to push boundaries while maintaining exceptional traditional French techniques, using imported flour from Les Grands Moulins de Paris and hand-churned Isigny Sainte Mere butter that costs 50 percent more than high-quality American alternatives.
