This week, we're thrilled to feature Four & Twenty Blackbirds, the Brooklyn pie institution founded by sisters who transformed their grandmother's rural South Dakota recipes into NYC's most celebrated pie destination.
Four & Twenty Blackbirds comes from sisters Emily and Melissa Elsen, who learned the art of pie-making from their grandmother at their family's restaurant in Hecla, South Dakota (population 227). By age 16, the girls became short-order cooks.
Founded in 2009 after the sisters baked pies from their Crown Heights apartment, Four & Twenty Blackbirds was created because the sisters couldn’t find anyone in NYC focusing exclusively on handmade pies. So they decided to bring their Midwestern-style craftsmanship to Brooklyn.
Named "Artisans of the Year" by Time Out New York in 2011 and featured everywhere from Martha Stewart Living to Oprah, Four & Twenty Blackbirds has become famous for unexpected seasonal flavor combinations like Salty Honey, Green Chili Chocolate, and Black Currant Lemon Chiffon. The continue maintain hand-rolled butter crusts and source ingredients from local orchards including foraged items like wild ginger.
