This week, we're thrilled to feature Spirals, the East Village's newest entry in the neighborhood's growing cinnamon roll scene, bringing creative flavor combinations to the classic pastry.

Spirals comes from founder and baker Arin Senior, who left her corporate job in the strategic financial department of Estée Lauder Companies after spending countless weekends and nights in 2023 testing recipes and developing her vision for a dedicated cinnamon roll bakery.

Founded on two simple questions—"Why is it so hard to find a great cinnamon roll in a city teeming with bakeries?" and "Why do we always stop at cinnamon?"—Spirals was born from Senior's determination to create something that would set her bakery apart in the competitive landscape.

Known for both classic cinnamon rolls and rotating creative flavors like cookies and cream, strawberry shortcake, s'mores, and a savory pistachio pesto burrata option, plus a unique cinnamon roll challah with braided dough, Spirals represents Senior's commitment to expanding beyond traditional boundaries while maintaining focus on soft, fluffy texture.
