This week, we're thrilled to feature La Bicyclette!


Founded by French baker Flo, who has been obsessed with baking since age 6, entered a formal apprenticeship at 13, and was a certified head baker by 16 - before spending years working in bakeries around the world.


That kind of pedigree shows in every single item that comes out of his kitchen - this is decades of mastery baked into every layer of dough.


La Bicyclette operates with distinctly French sensibilities. Open limited hours, and when they're sold out, they're sold out - which only adds to why lines wrap around the block every Saturday morning.

Croissants That Justify the Queue

Flo's lamination technique is the real deal — the kind of flaky, buttery, honeycomb interior that takes years to get right and that most bakeries never achieve.


The twice baked almond croissant is fudgy and rich inside while maintaining a perfectly crisp exterior — the kind of pastry that makes you rethink everything you thought you knew about croissants.
