Treat Day is excited to feature Bub's Bakery, the revolutionary NoHo spot that's completely rewriting what allergen-free baking can be. This place is producing first-of-its-kind innovation that makes pastries so good you'll forget they're free of all nine major allergens.

Bub's comes from the brilliant collaboration between Jenn Saesue — the restaurateur behind Fish Cheeks and Bangkok Supper Club — and James Beard-nominated baker Melissa Weller. The whole thing started when Saesue couldn't find a birthday cake for her husband that was free of all his allergens—not just gluten-free or dairy-free.

What makes Melissa Weller special is her approach to the challenge—instead of just swapping ingredients like other allergen-free bakeries, she spent years reading science journals and developing completely new techniques from the ground up. Her goal isn't to make the best allergen-free pastries, but to make the best pastries, period. They just happen to be free of gluten, dairy, soy, nuts, and all animal products.

Their menu is pure American nostalgia—think kouign amanns, oversized cinnamon rolls, chocolate cupcakes with fluffy frosting, and buttery egg & cheese sandwiches that taste exactly like the originals. For people with allergies, this might be their first taste of iconic flavors like peanut butter & jelly and pumpkin pie, which is honestly pretty amazing when you think about it.
