They use local produce, seasonal fruit for their rotating pies and cakes, and most importantly, premium Isigny butter from France that gives their croissants that rich, unmistakable depth. It's a farm-to-table philosophy applied to a bakery, which is rarer than you'd think in NYC.
Claude was one of 2024's best new bakery openings, nailing both the classics and the creative stuff. Their almond croissants use almond pastry cream instead of the typical almond paste, creating this smooth, creamy center that's become something of a signature. The chocolate cake has people doing side-by-side taste tests with other NYC favorites. And their seasonal menu means you're getting things like blueberry corn cake and elote croissants when the ingredients are at their peak.
