The Studio Bakery That Brought Salt Bread to New York
This week, we're thrilled to feature Uju Studios!
Founded by Pearl, a self-taught baker who started experimenting with recipes on her own at age 8 because her mum was a great cook but not a dessert person.
She spent years baking as a hobby, fell in love with the process, and kept building a running list of flavor combinations she wanted to try someday.
Last year she left her tech job and started doing pop-ups at Kinhfolk in East Williamsburg.
It snowballed fast.
Korean Inspired Treats Done Right
Pearl specializes in Korean and Asian-inspired baked goods — flavors she grew up with or discovered on bakery-hopping trips through Korea and Japan.
Her Salt Bread took off almost immediately — back in fall 2025, barely anyone in the city was making it, and people who had tried it abroad were desperate for it here.
Her scone incorporates Turtle Chips, a Korean corn snack she loved growing up, to bring out a deep, toasty corn flavor that you won't find anywhere else.
Every pop-up has a theme and an entirely new menu — because that's just how her brain works.
Thriving on Creative Freedom
Pearl has a long list of ideas she wants to try and intentionally keeps her format flexible so she never has to stop exploring.
She's not chasing a brick-and-mortar — she's chasing the next great flavor combination, and New York's adventurous food culture is exactly the right place for that.
Tofu Eats, one of Instagram's most respected AAPI food creators, has highlighted Uju Studios to the exact audience that gets what she's doing.
She has a monthly pop-up residency at Kinhfolk and is selling at a market on June 6 at Cafe MSMN.
